Ingredients
3 cans (15 oz.) hominy drained3 cans (10 oz) green enchilada sauce1 large onion, chopped2-3 cloves garlic2 tsp. cumin1 tsp. salt1/2 tsp. pepper2 cups chicken low sodium broth (or 14 oz. can)2 lb. (recipe says 2.5 lb) pork loin roastfresh green chilies (I guesstimated .2 oz)1 can black beansOptional toppings1/2 cup snipped fresh cilantro2 Tbsp. lime juiceSour Cream
Directions
Mix everything except pork and toppings in the crock pot. Add pork and spoon mixture over the top. Cook on low for 7-9 hours. If using pork, take out and it should shred easily. Put back into soup mixture. Serve with tortillas, tortilla chips or over rice. Top with toppings of your choice.

Makes about 10 1 1/2 cup portions

    This is delicous. I used a 3lb pork loin and two 30oz cans of hominy. Also used an extra can of chicken broth. Delish! - 1/2/11
