Mediterranean Couscous

Ingredients
1 3/4 cups fat-free low salt chicken broth3/4 cup couscous1 cup grape tomatoes, halved1/2 cup chopped seeded peeled cucumber1/2 cup chopped red bell pepper1/4 cup sliced green onions1/4 tsp grated lemon rind2 tbsp lemon juice4 tsp extravirgin olive oil1 tbsp chopped fresh sage1/2 tsp salt1/2 tsp pepper
Directions
1. Bring broth to a boil in a mdeium saucepan, gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Combine couscous, tomatoes, and remaining ingredients in a large bowl.
