Hush Puppies by A

Ingredients
2/3 cup corn meal1/3 cup all purpose flour1 tsp baking powder2 tsp onion powder3/4 tsp salt1/8 tsp black pepper1/3 c fat free milk (i used Over the Moon skim milk)2 eggs2 tbsp Land o Lakes unsalted whipped butter (mealted)
Heat oven to 450 degrees.
Spray a 24 mini muffin pan with non-stick spray.
In medium bowl mix all dry ingredients.
In seperate bowl mix all wet.
Fold wet into dry until all is just moistened.
Spoon 1 tbsp of mix into each hole in pan.
Bake for 8 mins or until golden brown
NOTE: I used a dark pan when I made them, but cooking time may need to be extended by 1 or 2 mins for light colored pans.
Serving Size: makes 6 (4 hush puppy) servings
