Chicken and Spinach Stir Fry

Ingredients
10 oz chicken breast3 cups fresh spinach1/2 cup each of onion, red bellpepper, and mushrooms1 tbsp olive oilsaltgarlic powederpinch red pepper flakes
Directions
Chop chicken and vegetables into small pieces. Cook chicken in oil until white - add seasonings while cooking. Add vegetables (except for spinach) and finish cooking.

When the chicken is cooked and the vegetables are soft, add the spinach. Stir it into the chicken mix until it is wilted.

Serving Size: makes 2 1-cup servings
