Skinny General Tso's Chicken

16 oz boneless skinless chicken breast1/2 tsp Splenda2 Tbsp Low sodium soy sauce1/2 tsp ginger root2 stalks green onion or scallion2 cloves garlic1 tbsp vinegar3/4 cup low-sodium chicken broth1/4 cornstarch2 large egg whites1 tsp crushed red pepper flakes1 dash salt1 dash black pepper
In a bowl combine broth, vinegar, soy sauce, splenda and ginger
Cut chicken into bite size pieces
In a small bowl whisk 2 tbsp of cornstarch with 2 egg whites, salt and pepper. Dredge chicken in mixture and add to non stick skillet coated with cooking spray. Cook and turn occasionally until golden. Remove from pan and set on plate. Add minced garlic, scallions, and red pepper to pan and cook for 2 minutes. Add broth mixture and cook an additional two minutes. Return chicken to pan and heat until sauce thickens and reduces to about half.
