Vegetable Frittata

Ingredients
2 cups broccoli - blanched1 med onion chopped - saute in garlic seasoning1.5 sm containers mushrooms - sliced & sauted in garlic4 oz. roasted red peppers - sliced1 4 oz can diced chilesEgg Mixture:12 eggs1/2 c plain soy milk1/4 c. daiya moz cheese2 tsp saltpeppercheyanne - optional
Directions
prep veggies and pour into a 9x12 sprayed casserole dish. Pour egg mixture over veggies and bake for 30-35 minutes. Sprinkle more cheese on top and bake 5 minutes longer.
