Dijon Chicken

1 Tb olive oil4-6 boneless, skinless chicken breasts2 Tb dijon mustard1 tsp black pepper1 cup lowfat milk1 Tb white cooking wine2 tsp white flour
Heat olive oil to medium heat. Rub chicken breasts with dijon and pepper. Cook chicken in oil until done. Remove from heat and then stir in half of the milk and the white wine. Stir together with the remaining mustard in the pan, being sure to scrape the bottom of the pan to get the yummy crispies in the sauce. I really like the dijon taste, so I stir in another Tb of mustard at this point as well. Stir flour into the remaining milk and then pour this mixture into your mustard sauce. If going Carb-free, you could leave the flour out and just add less milk. It won't be thick, but it will still taste good.
Scrape the bottom of the pan constantly until thickened. Pour over the chicken breasts and enjoy with a nice salad.
