Lentils and Carrots

Ingredients
3/4 C Green Lentils dry3/4 C minced carrots1/2 C mince onions
Directions
Boil lentils for at least 12 minutes with the onions with 2 coups of water (substitute broth if preferred). Add the carrots 5 minutes into the boiling process. Add water if it is too dry (personal preference). Salt and pepper to taste. Do not salt while boiling as it may cause hardening with the lentils.

I like adding other spices such as turmeric or cumin, paprika or chilli powder.
