Crustless zucchini quiche

Ingredients
300 gms. zucchini, grated1 small onion, diced50 gms. celeriac, diced1 Tbsp. olive oil4 eggs1/3 cup 1% milk150 gms. 3% Bulgarian cheese2 Tbsp. parmesan cheese, grated1 tsp. fresh thyme1 tsp. fresh oregano, chopped
Directions
Grate 300 g. zucchini and set aside. Dice onion and celeriac and saute in 1 Tbsp. olive oil. Add salt and pepper to taste.
In mixing bowl whisk eggs and milk. Crumble cheese and add it to the mixture in the bowl. Add grated zucchini and parmesan cheese. Add cooled onion and celeriac, fresh thyme and fresh oregano, if available. Adjust seasoning, as necessary.
Bake in 350 degree F. oven in 21 X 28 cm. (8 X 11 inch) pan with nonstick surface for approximately 20 minutes.
