Ingredients
2 lbs potatoes (peeled)8 oz velveeta lite cheese5.2 oz lf cheddar cheese1/2 minced onion6 med slices baconsalt & pepper to taste
Directions
boil potatoes, onion, bacon until potatoes are soft. Use just enough water to cover potatoes. Add salt & pepper to taste.

mash up potatoes to soup consistency & add cheese until melted.

    The kids and I liked this soup. I left some of the potatoes in small chunks for texture. I also used equal amts of cheddar to the Velveeta. Next time I will add more veggies like tiny slices of carrot, celery and green onion for more color and flavor. - 11/25/07

    I love Bob Evans cheddar potato soup, so I had to try this tonight. It was awesome! I did use 8oz cheddar too instead of the 5.2oz along with 8oz velvetta. Very yummy!!!! - 11/11/07
