Gluten Free Low Fat Pancake

Ingredients
1 whole large egg (or you can use liquid egg whites = to one egg)2 TBSP organic oat bran2 TBSP lowfat ricotta cheese1 tsp Stevia in the raw1/4 tsp ground cinamon
Directions
Lightly beat egg in small bowl, then add the rest of the ingredients and mix well. Pour into well heated nonstick pan that's been sprayed with Pam or other spray oil. Cook on medium heat for about 3 or 4 minutes before turning. Edges will be dry looking and begin to brown before turning. Cook on the other side for another 3 to 4 minutes. Transfer to plate and enjoy with light pancake syrup, fruit, or whatever topping you wish. Or don't use any topping, they're great just like they are!

You can use less or more of the stevia and cinamon, according to your personal taste. Or you can use allspice, nutmeg, or any other seasoning. You could even make the pancake savory instead of sweet, by adding herbs such as basil, rosemary, a little salt or whatever you want your pancake to taste like! They're very versatile! You can use them for breakfast, lunch or dinner, or even snack time!
