Unripe's Own Chili Con Carne

400g fillet steak diced1 slices pork belly1 tbsp of peanut oil2 medium onions chopped2 cloves garlic2 fresh hot chilli peppers chopped2 tbsps of cumin seeds ground1 tbsp of Unripe's Own Chilli Powder1 tbsp of cocoa powder˝ teaspoon of hot paprika1 tin of chopped tomatoes1 tbsp of tomato puree150ml beef stock1 tsp of soft brown sugarGenerous pinch of saltBay leaf˝ tsp of oregano1 tin of red kidney beans
Brown all the meat and remove from the pan to a bowl with a slotted spoon. Fry the onions and garlic for a few minutes until tender. Add the chilli pepper and fry for another minute. Add the spices and fry for a few seconds then add the meat and any juices that accumulated in the bowl. Stir. Add the tomato, stock, sugar, salt and herbs. Reduce heat and simmer for half an hour or so (at least). Add the kidney beans and simmer for a further half an hour or so. Eat.
