Lemon Chicken

Ingredients
  • 4 boneless, skinless chicken breasts
  • 2 teaspoons dried basil leaves
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1 garlic clove, finely chopped
Directions
1. Remove fat from chicken.

2. Make lemon sauce: Beat remaining ingredients in a medium-sized bowl with a whisk or fork.

3. Spray a 10-inch skillet with cooking spray and cook chicken over medium-high heat for about 15 minutes or until juices are no longer pink when thickest part of chicken is cut.

4. Spoon some lemon sauce over chicken, turn chicken over and cook for an additional 15-20 seconds. Serve chicken topped with remainder of sauce.

Serves 4.

    This is a great recipe. I added a few more spices like thyme, pepper, and Italian seasoning. Then I broiled the chicken in a cast iron skillet. It was delicious! I chopped up the leftover chicken to put in a salad tomorrow. This was yummy. - 1/2/11

    It was pretty good! Next time I think I may rub the chicken breasts with this the day before I cook, to let the taste sink all the way through then brush with lemon juice while cooking. We also used the Foreman and it worked like a charm! - 1/24/10
