Impromptu Chicken Pomodoro

Ingredients
2 Boneless, skinless Chicken breasts 4.8 oz/ea, cubedOlive Oil, Extra Virgin, 3 tbs Red Ripe Tomatoes, 2 large whole (3" dia), choppedGarlic, 2 cloves mincedHannaford Angel Hair Pasta, 8 oz Spinach, frozen, 1 package (10 oz), thawed.Campbell's Chicken Broth 10.5 oz canBalsamic vinegar, 3 tablespoon Sea Salt, to tastePepper, black, to taste Pepper, red or cayenne, to taste (if desired)
Directions
In a deep skillet, add oil, chicken and garlic, until chicken is done. Add the chopped tomatoes, spinach, broth, vinegar, and spices. Simmer until broth is reduced by about half. While reducing, cook angel hair separately as directed; drain. Toss in skillet. Serve with parmesan and/or garlic bread if desired.

    This looks amazing but just be careful. A serving size of pasta is usually 2 oz. which would make this dish serve 4 people, not 7. - 2/6/15

    I made this and I didnt really l ike it, i dont think I like Balsamic Vinegar.. If I made this again I wouldnt add that, and I would probably add another tomato and maybe some feta cheese instead to give it flavor. - 1/16/08
