Cottage cheese fruit juice sweetened pancakes

Ingredients
Cottage Cheese, 2% Milkfat, 2/3 cFrozen Orange Juice Concentrate 1/4 cWhole Wheat Pastry Flour, 1 cup Baking Powder, 1 tspEgg whites 1/2 cyou can use any type of 100% fruit juice concentrate you would like
Directions
preheat skillet to med high and spray with veg oil

blend cottage cheese, fruit juice concentrate and egg whites until smooth. add flour and baking powder and mix.

add 1/4 cup of batter to pan for each pancake. turn when underside is brown.
