Greek Quinoa Salad

Ingredients
*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 2 cup (remove)Olive Oil, 2 tbsp (remove)Basil, 3 tbsp (remove)Feta Cheese, 12 oz (remove)Cucumber (with peel), 1 cucumber (8-1/4") (remove)Tomato, grape (3oz = appro 12 tomatoes), 8 oz (remove)Black Olives, 200 grams (remove)Salt, 1 dash (remove)Pepper, black, 1 dash (remove)
Directions
1. Prepare quinoa the traditional way by adding the two cups of dry grain to a saute pan with the four cups of water. Let cook on med-high heat until it starts to boil and then reduce to medium heat and let simmer for 15-20 minutes while starches release and quinoa softens.

2. In the meantime, chop all vegetables and combine with basil, salt, pepper, and olive oil in large bowl. Let sit while quinoa continues to cook.

3. When all water has absorbed from quinoa, let cool and combine with vegetables. Stir gently and well. Add feta cheese/

4. Serve chilled. Makes 12 servings!
