Wendy's Special Treat BBQ Chicken Pizza

Ingredients
1 pkg. active dry yeast (.25 ounce)1 1/3 cups warm water (between 105 and 115 degrees)1.25 cups whole wheat flour2.5 cups white flour2 T olive oil1 T salt 1 T sugar16 T Dinosaur BBQ Sauce2 cups shredded mixed cheddar & monterey jack cheese1 cooked chicken breastscallions
Directions
Start by making the dough (give yourself at least two hours before you want to eat!). Mix the yeast with the warm water, and let stand for 5 minutes, until completely dissolved. Add flour (you can change the ratio of whole wheat to white, if desired), olive oil, salt, and sugar. Mix by hand for one minute until combined, and then knead for 10 minutes, until smooth and elastic. Transfer dough to a bowl, lightly coated with olive oil, and turn once to coat in oil. Cover and let rise in a warm place for 1 to 1 1/2 hours. When the dough has doubled in volume, punch down once and divide into halves. Let each sit for 5-10 minutes to rest. Flour your workspace, and roll out the dough into two pizzas. Use cornmeal to dust a non-stick baking sheet. Preheat oven to 475 degrees.

Spread BBQ across rolled out dough on baking sheet. Sprinkle 1 cup shredded cheese on each pizza, followed by 1/2 chicken breast, shredded into bites. Top with finely chopped scallions, and bake at 475 for 15-20 minutes, until crust is browned and cheese is melted. Each pizza can be cut into 6 good-sized pieces. Enjoy!
