Chicken & biscuits w/ mashed potatoes & country gravy

5 tbsp. water3 whole boneless, skinless chicken breast, cubed1 pkg. (16.3oz.) Grands homestyle buttermilk biscuitssalt, pepper and garlic to tasteMashed Potatoes5 large potatoes peeled and sliced2 tbsp. butter3/4 cup milk
Freeze chicken for one hour to make cutting easier. Cube chicken and trim of excess fat. Place in skillet and set aside. Peel and slice potatoes. Place in sauce pan. Fill pan with water just enough to cover tops of potatoes. Add water and seasonings to chicken and cook through. At the same time, boil potatoes on high until tender. Drain. Set chicken aside once it's cooked through. Place potatoes in mixing bowl add butter and milk. Beat with electric mixer until smooth. Preheat oven to 350. Make gravy according to package directions. Fill 2 (6x8) glass baking dishes 1/2 full with mashed potatoes. Spread out evenly across bottom of pan. Top each pan evenly with chicken. Pour 1 cup gravy evenly over each pan. Spread evenly over chicken and potatoes. Slightly stretch each biscuit to approx. 4" sqaure. Top each pan evenly with 4 biscuits. Bake at 350 for 25-30 minutes or until biscuits are completely cooked thru. Serves:8
