shaved asparagus salad with lemon

Ingredients
1/4 cup pine nuts or sliced almonds, toasted and cooled1 pound asparagus, rinsed1 lemon, halved (for roughly 3 Tbs juice)Olive oilCoarse saltFreshly ground black pepper2 Tbsp Parmesan cheese
Directions
1.) Lay asparagus flat on cutting board and shave from stalk to tip using a veggie peeler. (You don't need to snap off tough ends beforehand.)
2.) Gather ribbons in pile, drizzle with lemon juice and olive oil to taste. Season with salt and pepper to taste. Toss.
3.) Use peeler to shave parmesan onto asparagus. Sprinkle with toasted nuts and serve immediately.

Nuts can be toasted on baking sheet at 350 for 5 to 10 minutes. Stay close and toss repeatedly to make sure they don't burn.
