Slow Cooker Apple Butter

Ingredients
For 3- or 4-quart slowcooker:7 large apples1/2 tbsp vanilla extract2 tsp ground cinnamon1/2 tsp allspice1/4 cup granulated sugar1/4 cup brown sugar
Directions
Peel and quarter the apples. Place in slowcooker with the vanilla extract. Cook on low for 8-10 hours or so.

Mash apples with fork. Add the rest of the ingredients, cook an additional 3-5 hours, still on low.

Puree in blender to desired smoothness (you can skip this step if you prefer a chunkier apple butter; it only takes a few seconds to get a nice, smooth apple butter in the blender).

NOTE: I like to buy bruised and over-ripe apples off the distressed cart at my grocery store, which is a great way to make cheap apple butter. Your apples don't have to be pretty or particularly fresh.

The timing is up to you. I started my apples around 7pm, went to sleep, smashed them and added the other ingredients around 6:00 the next morning, then blended and jarred it a couple of hours later. As long as you don't let your apples burn, this recipe is impossible to screw up.

Serving Size: Makes about 3 cups, or 48 1-tbsp servings.
