Shrimp & Mango Ceviche

Ingredients
- 75 grams cooked shrimp- 3 tbsp chopped red onion- 1 tbsp lime juice- fresh or dried cilantro leaves to taste- 75 grams of mango, peeled, pitted and chopped- 3 cherry tomatoes, quartered- 1/8 jalapeno pepper, finely chopped for a little bit of spice- salt to taste
Directions
Chop shrimp into 1/2-inch pieces and transfer to a large bowl. Add onion, lime juice, cilantro, mango, tomato, jalapeņo and salt and toss well. Cover and chill until ready to use!

Serving Size: makes about two cups to be split into appetizer size or blended together for an entree
