Sarah's Light Tofu Chocolate Banana Pudding

Ingredients
7 oz. (1/2 block) silken soft tofu (in water, drained)1 1/2 tablespoons unsweetened cocoa powder1 teaspoon vanilla extract2 tablespoons coffee 4 teaspoons Splenda Sugar Blend (50/50)1/2 medium banana, sliced4 Famous Chocolate Wafer cookiesFat Free Reddi Whip
Directions
In a small blender cup, combine tofu, cocoa powder, vanilla, coffee, Splenda, and banana. Blend until completely smooth.

In a separate small blender cup, pulverize chocolate wafer cookies until consistency of sand. Distribute among 2 small cups. Divide pudding equally among 2 cups. Cover and refrigerate for 2-4 hours. Top with whipped cream topping.
