Broccolli and Mushroom Frittata (vegan)

1/2 c Broccolli, 1 c mushrooms, 2 cloves garlic, 1/4 c onion, 1 block tofu, 1 tsp tumeric, 1 tsp coriander, 1 tbsp olive oil, 1 tbsp tamari
Mash tofu in a large mixing bowl, using your hands or potato masher until it resembles cottage cheese. Add Tamari and mustard and mix well.
In a fritatta pan or skillet with metal handle, saute onions and mushrooms in 1 tbsp olive oil for 3 minutes. add broccolli and garlic and saute 3 minutes more. add garlic and spices. deglaze the pan with apple cider vinegar and add dump the pan into the tofu mixture and combine well.
return to pan and bake at 400 degrees for 25 minutes. broil for 3 minutes to darken the top. let cool and slice into wedges.
