Vegetarian Cheesy Potato Breakfast Casserole

Ingredients
1 box of Au Gratin Potatoes2 Original Vegan Boca Patties cooked and chopped (or 1 cup of Boca crumbles)1 1/2 cups of Egg Substitute (or 6 large beaten eggs)1 1/2 cups diced green peppers1 cup diced fresh tomatoes1 cup finely diced broccoli1/2 cup diced celery1/2 cup finely chopped fresh spinach1/4 cup diced onion1/2 cup quick oats1/2 tbsp ground black pepper2 tbsp of Smart Squeeze butter substitute (or butter or margarine)1/2 cup skim milk2 cups boiling water
Directions
Pre-heat oven to 425 degrees. In a large casserole dish, mix the Au Gratin potatoes with the sauce mix that came in the box, the water, the milk, and the butter substitute. Mix until fully incorporated. The place all other ingredients EXCEPT the egg substitute into the dish. Mixx thoroughly. Pour the egg substitute over the top as evenly as possible. Cook in the oven for about 25 minutes or until egg substitute is completely cooked.
