Coleslaw with Honey Peanut Dressing

Ingredients
4 c. green cabbage, shredded (approx. 1 head)3 c. red cabbage, shredded (approx. 1/2 head)1 c. carrots, shredded2 tbsp cilantro, chopped1/3 c. smooth peanut butter1/3 c. light coconut milk1/3 c. honey1 tbsp rice vinegar1-2 tsp of ginger, to tastesalt, to taste
Directions
Shred cabbage and carrots and mix into large bow. Add chopped cilantro and toss. In a small bowl, whip peanut butter, coconut milk, honey, vinegar, ginger and spices. Pour over cabbage mix and mix thoroughly. Chill for at least 2 hours and serve.
