Elana's Gluten Free Dairy Free Yeast Free Bread

Ingredients
2.25 cups blanched almond flour (she says Honeyville works best)1.125 cup arrowroot powder (I used tapioca starch).375 cup flax seed meal½ teaspoon celtic sea salt3/4 teaspoon baking soda6 eggs1.5 teaspoon agave nectar1.5 teaspoon apple cider vinegar
Directions
1. In a medium bowl, combine almond flour, arrowroot (or tapioca), flax meal, salt and baking soda
2. In a larger bowl, blend eggs 3-5 minutes until frothy
3. Stir agave and vinegar into eggs
4. Mix dry ingredients into wet
5. Pour Scoop batter into a well greased loaf pan
6. Bake at 350º for 45-50 minutes, until a toothpick inserted into center of loaf comes out clean
7. Cool and serve

    I really enjoyed this bread. I used vegetable glycerine instead of agave and added some chopped frozen rhubarb. Lovely. I believe the tapioca and eggs are what gives it such a beautiful brown crust - 2/4/12
