Tuna Casserole

2 tbsp olive oil1 c chopped onion1 c diced celery1 c chopped mushrooms1 can cream of mushroom, flor de calabaza, corn, etc. soup3/4 c water or milk8 oz frozen peas or corn2 6-oz cans tuna in water, undrained1 c buttered crumbs8 oz noodles
Preheat oven to 400F/ 204C. Spray glas casserole (9x11) w/ cooking oil.
In large saucepan, saute onion and celery and mushrooms in butter or olive oil until veg are barely soft, but not mushy. Add can of soup, water, and peas/corn. Bring to simmer, stirring. When it begins to boil, turn off heat and gently fold in tuna w/ liquid.
Add cooked pasta and toss to coat w/ sauce.
Pour into prepared casserole and top w/ crumbs.
Bake 30-40 minutes until heated and topping is lightly browned.
