Chicken and Brown Rice Casserole

Ingredients
3 boneless skinless chicken breastsQuick Cooking brown rice prepared with 1 cup chicken broth in place of 1 of the cups of water - enough for 6 servings1 10 ounce bag broccoli flowerettes1 can of cream of potato soup 3/4 of the soup can low fat milk1 cup shredded cheddar cheesesalt to tasteground pepper to tastegarlic powder to tasteTony Chachere's Cajun spice to taste
Directions
Preheat oven to 350 degrees. Heat olive oil in pan over medium heat. Add chicken breasts. Sprinkle breasts with salt, pepper, garlic powder and Tony Chachere's. Brown both sides thoroughly. You can prepare your rice while cooking the chicken. Substitute 1 cup of water with chicken broth. Remove chicken from heat and dice into cubes. Mix chicken, rice, and all other ingredients together and place in a greased casserole dish. Bake for 30 minutes.
