Simple Black Bean and Tomato Soup

Ingredients
2 cans black beans, drained and rinsed1 can petite diced tomatoes, undrained3 cups chicken stock1 tsp salt1 Tbsp ground cumin1 tsp onion powder1 tsp garlic powder1 ham hock or smoked turkey wing
Directions
Remove 1/2 cup black beans and mash with fork until pureed. Pour everything into a Dutch oven and bring to a boil. Reduce to simmer and cook for 30 minutes. Remove ham hock or smoked turkey wing. (it was only for flavor, no calorie count was given for it).

Makes 6 servings 1 cup per serving

Serve with quesadilla for yummy meal.

    you can even make it the veggie way by eliminating the chicken stock, and the meat items. you may saute onions and green and red bell pepper first, then add the black beans and the rest of the ingredients. tastes and looks good. - 6/1/11
