4 Cups Swanson Chicken Broth 99% Fat Free.7 Medium Diced Onions4 Stalks Celery3 Medium Carrots peeled5 Chopped Garlic cloves3oz Tomato Paste4 Medium Blanched Red Ripe Tomatoes1 Cup Sliced Zucchini.5 Cup Sliced Winter Squash1 Cup Yellow Sweet Corn, Canned1 Cup Lima Beans, Canned.5 Cup Chopped Green Beans (snap)4 Tbsp Chopped Scallions2 Russet Potatos1 Tsp Salt1 Tsp Pepper.7 Tbsp Dried Basil
Makes 6, 1 Cup Servings
On medium heat, cook diced onion, chopped garlic cloves, chopped celery, and chopped carrots until onion start to go clear. Add broth, tomato paste, salt, pepper, basil, and rest of veggies. Cook over Medium-Low heat until veggies are fully cooked. Stir occasionally.
For an additional kick, serve with tortilla chips and fresh avocado on top.
