Chicken Chili

Ingredients
1 Tbls extralight olive oil2 Tblsp finely chopped fresh ginger4 green onions chopped6 cloves garlic chopped2 bell peppers diced1 can tomato paste1 pound of chicken breast , skinless and boneless, cut in one inch pieces1 28 ounce can tomatoes2 cups kidney beans (540ml) drained and rinsed2 cups black beans (540 ml) drained and rinsed
Directions
Heat oil in large skillet on medium heat.Add the ginger, onions and garlic and cook, stirring for about 1 minute. Add the peppers and tomato paste and cook for afew minutes more. Add the chicken, cook and stir for about five minutes until chicken in white on the outside. Add the tomatoes and bring to a boil. Reduce heat and simmer for 25 minutes. Stir in both beans and cook for an additional 15 minutes.
