24 oz raw chicken breast -- cubed4 Cups Water1 Teaspoon Salt1 Large Potato -- quartered2 Large Carrots -- in large pieces1 Medium Chayote -- in large pieces1 Medium Onion -- coarsely chopped1/4 Cup Mint Leaves -- finely chopped1/4 Cup Cilantro -- chopped
Cook chicken in water with salt over moderate heat for 10 minutes. Add potato, carrots, chayote and onion. Simmer over low heat for 20 minutes. Add mint and cilantro. Simmer for 3 minutes. Serve with tortillas.
