Brown rice Chicken soup w Biscuit toppers in Ramekins

Ingredients
1 cup Brown Rice, long grain, 1 cooked Chicken Breast diced, bone and skin removed 1 cup Celery, raw, diced ¼ cup Peppers, sweet, red, fresh, , chopped ½ cup Mushrooms, fresh. pieces or slices 1 Tbsp Cornstarch 1 cube Chicken bouillon 6 oz waterBiscuit topping1 ½ cup Heart Smart Bisquick (mix only), ¾ cup Milk 1%, 1 large Egg, fresh
Directions
Cook rice according to package directions.

Make chicken bouillon, add cornstarch and stir. Set to the side.

Mix Bisquick, milk and egg. Stir. It looks runny at first but does thicken up. Set to the side.

Add remaining ingredients to rice, bring to a boil and simmer. Add additional water as needed.

Spray ramekins with non-stick spray and place on a jelly roll pan.

Spoon soup into ramekins ¾ full. Top with bisquick batter. (It is still pourable)
