Mennonite Roasted Pig Tails

Ingredients
3 lbs. Pig tails, tail ends removedsauce:1.5 tsp salt1/3 tsp fresh ground pepper1.5 tsp paprika1.5 tsp dry mustard1.5 tsp brown sugar1.5 tblsp worcestershire sauce3/4 cup chili sauce3/4 cup water1/3 cup cider vinegar2/3 very finely chopped onion2 cloves garlic, minced.Subsitutes not recorded in nutritional count :White sugar, honey or molasses for Brown SugarKetchup for chili sauce
Directions
Place pig tails, fat side up on a rack in an open roasting pan.
Bake 2 hours at 300 degrees F
Drain off the fat.
Combine the ingredients for the sauce and simmer for 10 minutes
Lay the pig tails in the bottom of an open roasting pan.
Spoon over some of the sauce not all.
Return to oven and continue cooking for another hour.
Spoon more sauce periodically so that they are well coated.

To BBQ, pre roast in oven as directed.
Lay pieces on the grill,paint with sauce and grill till succlulently brown and crip, turning and brushing on more suace periodicaly.

    Very close to what my Grandma made (She was a Mennonite) when I was growing up.
    Here's a tip;
    If you want to spice it up a bit you can substitute Salsa in place of the Chili Sauce. I used mild Salsa and honestly there was no difference in taste and the sauce is awesome over accompanying white rice - 11/6/18
