Mary's Thanksgiving Carrots

Ingredients
Thanksgiving Carrots2 cups carrots (raw) (Note from Aunt Mary - I use more!)1 cup cracker crumbs (I always us Ritz ... put a sleeve in a ziplock bag and crumble by rolling a glass across them)1 cup evaporated milk1 cup shredded cheddar cheese 1/2 stick butter, melted1/4 cup grated onion (note from AM, I use less)1 tsp salt1/4 tsp pepper1/8 tsp cayenne pepper2 eggs - beaten
Directions
Cook and mash carrots. Combine everything EXCEPT eggs. After mixed, add eggs. Pour into greased casserole dish and bake uncovered at 350 for 40-50 minutes. Let stand for a good 15-20 minutes.

This recipe doubles well!
