Crispy Mashed Potato Pancakes

2 c. cold mashed potatoes (made w/milk and butter)1 egg, slightly beaten1 t. Italian seasoning1/8 t. garlic powder1 T. olive oil1 T. flour
Combine the first four ingredients; mix well. In a small skillet, heat oil over med-high heat. Add potato mixture; press with a spatula to flatten evenly. Cover and cook for 8 mins or until bottom is crispy. Flip and cook again til bottom is crispy.
Can use other spices for different flavors such as; ranch mix, add parmesan cheese to small amount of flour, roll pancakes in flour/cheese mixture before frying. Just remember to adjust the calorie content.
Serving Size: makes 3 cakes

If you mix the first 4 ingredients together where does the flour and oil go? I am assuming flour gets mixed in with the potatoes and oil goes in the pan? - 9/1/11

Yes you are correct. I'm sorry i thought it was all written properly. I just copied it from a recipe so I better go check the recipe again. Thanks for the correction.
