18 oz beef stew meat, broil-browned and drained1 1/4 c. sliced zucchini2 c. sliced summer squash1 c. sliced carrots2 stalks celery1 c. sliced mushrooms2 T. Better-than-bouillon beef base1/2 c. dry black japonica rice2 cans diced tomatoes (7 c. total)4 c. water
1. Combine everything in a crockpot.
2. Cook on high for 3 hours.
3. Let set for an hour.
