Stir-fried peppers with Cottage Cheese

Ingredients
1 pepper (or mix of peppers (I like italian peppers and pepperoncini or hungarian wax peppers)).25 c. cottage cheese1 tsp canola oil
Directions
Stir-fry peppers in minimal canola oil over high heat. Add peppers in order from thickest to thinnest skins.
When peppers begin to brown, turn off heat and add cheese. Stir together and plate immediately.
