Buckwheat Waffles

Ingredients
1 3/4 c. buckwheat flour1/2 t. baking soda1 t. baking powder1 t. salt3 T. sugar3 eggs4 T. oil1 3/4 c. soy milk
Directions
Sift dry ingredients together, set aside.
Beat eggs with oil, combine with milk.
Pour wet ingredients into well in dry ingredients. Stir.
May let rest til small bubbles form. Pour onto hot waffle iron. Bake as desired.
Top with warmed honey, fruit of choice, etc.
