Amazing Meat loaf

Ingredients
2 pounds lean ground beef 1/2 cup rice cracker crumbs (or regular if you do not require gluten free--recipe calculated with regular style)1 small onion, cut in half (optional for 1/2 the onion) 1 cup grated carrots 1 egg 1 can (15 ounce) tomato sauce, divided 2 to 3 teaspoons gluten-free mustard (yellow or Dijon) 1 tablespoon gluten-free Worcestershire sauce 1 to 1 1/2 teaspoons sea salt freshly ground black pepper 2 teaspoons natural brown sugar (from Whole Foods)
Directions
Preheat oven to 400°F.

Dice half of the onion and if desired, thinly slice the other half to go over the top of the loaf.

Spray or oil a 9-inch loaf pan.

In large bowl, combine ground beef, bread or cracker crumbs, diced onion, grated carrots, egg, 1/4 cups of tomato sauce, mustard, Worcestershire, salt and pepper to taste.

Transfer to prepared loaf pan. If desired, lay sliced onions over the top of the meatloaf. Combine remaining tomato sauce with brown sugar. Pour over the top of onions or directly over the meatloaf. Bake for 45 mins to 1 hour or until done.

    I mixed this with a recipe from Pinterest as well as using gluten free parmesan bread crumbs. My husband loves is and asks me to make it all of the time! - 6/27/17
