1/2 c. margarine room temperature1 c. granulated splenda3 med. sized ripe bananas, mashed2 eggs, separated1/2 tsp. vanilla1/2 tsp. lemon juice1 tsp. baking soda1 1/2 c. unbleached or wheat flour1 1/2 tbsp. hot water
Heat oven to 350 degrees. Cream margarine and granulated splenda in large bowl. add bananas, egg yolks, vanilla, lemon juice, and baking soda. Mix well. Stir in flour. Beat egg whites until stiff, then gently fold into batter until blended. Stir in hot water. Pour into cupcake pan. Bake about 30 minutes or until toothpick inserted in center comes out clean. Let cool 10 minutes completely. Freezes well.
