Sour Cream and Garlic Mashed Potatoes

1 1/4 pounds of (4-5 ) russet potatoes, peeled and chopped5 garlic cloves, peeled3 Tbsp Fat-free sour cream(note this is different that is listed above, but I couldn't it to give methe option of tbsp for this food)1 Tbsp Olive Oil1/8 tsp salt1/8 group pepper
Combine the potatoes and garlic in a large pot and add enough water to cover. Bring to a boil, reduce heat and simmer until the potatoes are tender (20-30 min). Drain, reserving 3/4 cup of cooking liquid. Mash potatoes and garlic in sauce pan. Stir in sourcream, oil, slat and pepper. Slowly stir in cooking liquied (2-3 Tbsp at a time) until potatoes are consistency you like.
