3-4 Chicken Breast1 12oz can sweet yellow corn, drained1 12 oz can black beans, drained1 medium size jar of salsa1 12 oz can 99% fat free chicken broth
Preheat oven to 400. Place chicken in 13x9 pyrex dish. Prick chicken with a fork several times for each piece. Pour jar of salsa, can of drained black beans, can of drained corn, and chicken broth on top of chicken. Cover with foil. Poke small holes in top of foil to vent. Cook 35-40 minutes.
Allow mixture to cool for 5 minutes then carefully cut chicken into small chunks and return to pyrex dish. Eat as soup, over lettuce, or with Baked Tositos Scoops.
