1 TB olive oil2 teaspoons curry 1/4 cup onion 1/2 cup diced red bell pepper1/8 teaspoon dried ginger or 1 teaspoon fresh ginger 1/2 cup chicken broth 1/2 cup cream 3/4 teaspoon salt 3/4 teaspoon sugar substitute2 teaspoons lemon juice 16 ounces shrimp or pre=cooked chicken
1 oil with curry, onion, and ginger and cook until onion begins to soften.
2 Add the broth, cream, salt, sugar and lemon and stir.
3 Bring to a simmer and add the shrimp.
4 Serve over cauliflower rice or broccoli.
