Baked Mojo Pork Center Cut Loin

2 pork center cut loin boneless (4 oz each)Badia Mojo MarinadeLemon Pepper to tasteBushs Best Black BeansSuccess Boil in Bag Whole Grain Brown RiceCucumbers, tomatoes, and Balsamic Spritz Salad
Take Pork, dust with lemon pepper, and place in plastic bag with Badia Mojo Marinade.
Let set in refrigerator for an hour.
Preheat oven at 350.
I use a stone baking dish and placed the pork in a light coat of olive oil Pam.
Cover the top with a lil more Mojo, bake for 30 minutes, flip and add a bit more Mojo for the last 30 minutes.
My meat temp was about 160 and done.
I mixed the beans and rice with some Crystal's Hot Sauce, added cucumbers and tomatoes on the side in a Balsamic Spritz, and we're going Latino in a flash.
