Ingredients

    2 Tbs olive oil
    2 Lb pork shoulder or loin cut into 1 inch cubes
    1 lg.onion finely chopped
    1-2 jalopeno peppers seeded, and finely chopped.
    1 lg. red bell pepper
    1 garlic clove chopped
    1Lb fresh pineapple cut into chunks
    8 fresh mint leaves chopped
    8oz. low sodium chicken broth.
    Salt and pepper to taste.

Directions

serves 10 @3oz meat each.
\Heat oil in pan,saute pork until golden in color.place pork in large casserole,leave oil in frying pan,add the onion garlic, red pepper and chiles to frying pan and saute until tender,
add this to the casserole with the pineapple,add the chopped mint leaves,cover and cook for about 2 hours ,or until pork is tender, season to taste and garnish with a mint sprig serve with plain rice.Serve immediately,while hot.
