Easy Strawberry Shortcake

Ingredients
400g Strawberries1T Sugar16 Trifle sponges (2 boxes of 8)1 Can low fat custard2-5T Espresso (Strong instant coffee works well)1 packet Angel Delight, reconstituted with skim milk
Directions
Wash, hull and slice strawberries. Sprinkle with sugar and set aside.

Slice each trifle sponge lengthwise (think of it like slicing open a bagel or bun). Lay one layer of sponge in the dish - if possible, arrange the sponge so that each layer consists of 8 sponges (4 'original' sponges; 8 halved sponges).

Sprinkle sponge with coffee, then top with strawberries. Gently layer on 1/3 of the can of custard. Repeat. Final layer should be topped with Angel Delight rather than custard.

Keep refrigerated.
