Slow Carb Meatloaf Muffins

Ingredients
1 lb. ground pork1 lb. ground beef2 eggs1 can of cannellini beans, drained and rinsed1 c. frozen spinach1/2 onion, diced1 tsp. minced garlic1 tsp. salt1 tsp. pepper
Directions
Preheat your oven to 375 F.

Spray muffin tins with cooking spray, and set aside.

Reheat / cook spinach according to directions and set aside.

In a blender, combine the beans, eggs, garlic, and half of the diced onion. Puree until smooth.

In a bowl, combine the pork, beef, remaining onion, spinach, blended bean mixture, salt, and pepper. Mix well, then spoon into muffin tins.

Bake at 375 for 30 minutes or until done.

Serving Size: Makes 18 muffins

    This was great! Instead of the muffins, I formed it into a loaf in a 9x13" pan (for 30-35 min). Really had a great texture. Next time we might add a little pepper flakes to add a little heat. - 2/13/13
