Spinach Egg White Wrap(ish)

1 tsp. Olive Oil1 garlic clove, minced1/2 c. fresh baby spinach2 egg whitesSalt & Black Pepper1 tbsp part-skim mozzarella, shredded1 6-inch corn tortillaDash of cayenne pepper
Serving Size: 1
1. Saute spinach in OO and garlic about 1 minute
2. Add egg whites, salt, and pepper
3. Heat tortilla on a warm griddle or frying pan.
4. As eggs just set, turn off the heat and sprinkle cheese on top. Cover with a lid while tortilla warms.
Serve & Enjoy!
