LIght and Creamy Potato salad

Ingredients
4 lbs. red potatoessalt and pepper1/4 c. dry white wine4 Tbsp. lemon juice1/2 c. low fat buttermilk (I use skim milk w/ vinegar)1/4 c. light mayo1 Tbsp. Dijon mustard1 c. basil sliced basil leavesChopped chives for garnish
Directions
Slice potatoes and cook in pot of boiling water. When tender drain water. To bowl with potatoes add wine and 1 tablespoon of lemon juice and toss gently. Cool to room temperature.

Prepare Dressing: With wire wisk, stir buttermilk, mayo, mustard, salt, and pepper and remaining lemon juice until well blended.

To bowl with potatoes, add dressing and basil. Toss gently and garnish with chives. Keep refrigerated until ready to serve.
